2 T. olive oil

1/4 c. fresh orange juice

Finely grated zest of 1 orange

2 tsp. garlic, minced

2 tsp. dried tarragon

Salt and coarsely ground black pepper to taste

4 salmon steaks (about 8 oz. each)

2 tsp. fresh chives, chopped

Mix marinade: in a bowl, combine the olive oil, orange juice, orange zest, garlic, tarragon and salt and pepper. Add salmon to marinade for 1 hour at room temperature, tossing once or twice. While fish marinates, preheat oven to 475 degrees. Place the salmon in an ovenproof dish and pour marinade on top. Bake for 7 to 8 minutes. (Fish should flake easily when tested with a fork) then carefully remove to a serving platter and sprinkle each piece with 1/2 teaspoon chives. Serves 4.
